Kaulamalli pulo: This heirloom black, glutinous, unpolished rice comes from farms in West Bengal. Black rice is known to contain the highest amount of antioxidants, protein and dietary fibre of all rice varieties coupled with lower carbohydrate and high iron content. Royal purple when cooked, perfect for rice bowls & as a table rice.
Cooking: black rice takes longer to cook than all other rices. Soak overnight and cook in the pressure cooker with 1:3.5 glasses of water and wait for 3 whistles on high flame and 3 whistles on low flame. Even cooked it tends to be el dente.
